Food - Pita Series : Salmon Pita Sandwich

Summer is almost here!! I am super excited and cannot wait to get out there and soak the blazing sun :). Do you guys get lazy cooking during the summer ? because I do. I usually just want to go out and grab a burger ( I know.. call the health squad) but I found an easier way to stay somewhat healthy. I recently became addicted to Pita, you can eat it with anything. Breakfast, Lunch, Dinner, Snack and even dessert! We are launching a 4 week series for this versatile staple so let us know if you tried any of our recipes! Our first recipe is going to be a delicious Sunday lunch -  Salmon Pita Sandwich. 



Serving - 2 Full Pita Sandwiches. 

Start by poking holes in your salmon, and in a bowl , mix with salt and let soak for about 10 minutes. While its soaking, put the oven on 500 degrees. 
Cut the Salmon into four equal parts and season with salt and red peppers. Reduce the oven temperature to 275 degrees  and cook skin-side down. 
While the salmon is cooking, we are going to make a quick relish with tomatoes, onions, Italian seasoning and a drop of red wine vinegar. 

I love hot sandwiches so I toasted my pita bread. 
Assemble - Split pita into two, I start by putting in the relish, and then the salmon and my special sauce which I will be sharing very soon!! 
And you've got yourself a healthy sandwich! 

For Salmon - 

1 cup of water
1 tbsp of salt
1/4 pound of Salmon (you can determine how much you want to cook)
1 tsp of olive oil
black pepper and salt for seasoning
red pepper flakes for seasoning
Pita bread ( I usually buy the pocket pita bread from whole foods)

For Relish - 

Tomatoes - cored, seeded and diced
Onions - minced 
Salt and Pepper
1 tsp of red wine vinegar 
1 tsp of extra virgin olive oil
Italian Seasoning

Salmon - 
1. Heat oven to 500 degrees. Remove any fat from salmon and make 4 slashes on the salmon
2. Mix water and salt in a small bowl and let salmon soak for 5-10 mins
3. Pat salmon dry with paper towel. Cut salmon into 4 equal pieces. Rub fillets evenly with oil and season with black peppers, salt and red pepper flakes. 
4. Reduce oven temperature to 275 degrees and place salmon skin side down on the foil paper, or baking sheet. 
5. Roast until centers of thickest parts are well done, about 13 minutes. 
6. Toast Pita 

While Salmon is cooking, make relish - 

Combine all ingredients mentioned in the relish above in a bowl and season with salt and pepper to taste. 

Assemble - 

Cut toasted Pita into two equal parts
Put relish inside pita and follow with Salmon
Eat and Enjoy!! 
We ate ours with our special sauce, and spinach/apple salad!
